Morning Thoughts

 

It has really been unseasonably warm here. Highs in the 60s today, highs in the 60s again tomorrow. It has been sunny and breezy and positively springlike. While I’m absolutely loving it, it also has me a bit worried that we’ll either get hit with some really bad weather in February, or temperatures will just keep going up and by the middle of summer we’ll feel like our skin is on fire and we’ll all melt into one giant pool of sweat.

The good weather has left me feeling a bit restless, really. It’s like my body knows that this is the time of year when I should be hibernating and keeping a low profile, but the sunny days make me want to go outside, to run and be super productive. I’m sort of caught somewhere in the middle of these two and rather than feeling comfortable and cozy, or awake and energized, I’m mostly just incapable of getting a good night’s sleep and am never really sure what would be the best way to spend my daytime hours. I feel like I am both relaxing too much and not relaxing enough, which is confusing and troublesome. But I’m trying to just roll with it and find some sort of balance that adequately feeds both sides of my current psyche. Longer walks with the dog and more outdoor runs to take advantage of the good weather; cups of tea, good books and some art projects for the house to create a feeling of hibernation. I should have my most recent craft project finished within the next couple of days and will post some pictures here.

For now I am off to fold some laundry, take Ty for a nice walk, and then stretch out my poor aching back before heading off to my dreaded spa job this afternoon. My plans for the week are to do a few more house projects during the hours when I don’t have clients, find some tasty looking recipes to try out over the next week or so, including making my own granola, which is something I’ve wanted to do for a while, and finally finish up my 2011 tax stuff so that I can just be done with and fully concentrate on the new year. I feel like things are going to start picking up pretty soon and I really need to get that stupid tax stuff out of the way. The Super Bowl is this weekend, Dan and I will be attending a fancy event for his office at the end of next week, and then before you know it February will be over, Dan’s parents will be coming to visit in March, we’ll be devoting hours to watching college basketball and then BAM, it’s April which is already shaping up to be one of the busiest months of my life.

Now that I really think about what lies ahead in the coming months, hibernation is starting to look more and more appealing!

Deliciously Simple

Dan and I had one of those weekends that starts out with the best intentions of being social people with big plans and lots to do, but quickly devolves into spending the better part of two days and three nights zoning out on the living room couch thanks to a combination of poor sleeping, bad timing and the dog we were watching coming down with a very unfortunate case of diarrhea. We should have been out bowling with friends or taking care of some much-needed errands, but instead we just lazed around and took two-hour long afternoon naps. Sometimes it is nice to have a weekend where you just stay home and do absolutely nothing, but there’s something surprisingly exhausting about having lots of plans and failing to execute any of them. By Sunday evening, I felt ready to give up on life and just curl up into a fetal position in the middle of the kitchen floor. But I had to make dinner, an incredibly daunting task after a long weekend of nothingness.

It is weird that despite feeling lazy in pretty much every other way, Dan and I have both been geared up lately to make good meals. We don’t really ever have a tendency to eat unhealthy, but the urge to eat food that is fresh and nicely prepared has been very strong as of late. So I made a nice salad of mixed greens with sliced orange, avocado and dried cranberries, dressed with a raspberry walnut vinaigrette. It looked so beautiful–colorful and crisp and wonderfully healthy–and was meant to be our main dish, but it wasn’t quite enough to constitute a full meal. Since my desire to eat something simple but tasty was strong and my desire to go through the trouble of cooking was basically nonexistent, I decided to round out our dinner with a very easy sesame noodles recipe courtesy of The Pioneer Woman. It was an absolutely wonderful pairing and required so little effort. It was pretty much perfect! Hooray!

I didn’t have any green onions on hand, so I left those out and I don’t even know what Hot Chili Oil is, so I just substituted some Chinese Chili Sauce to add a bit of spice and I used angel hair pasta. It was really very tasty and I cannot stress enough how easy it was to make. The next time you have a weekend that doesn’t turn out the way you wanted or had planned and you just need something quick and easy to make for dinner, go with The Pioneer Woman’s Simple Sesame Noodles. It’s more than worth the minimal effort.

Ingredients

  • 12 ounces, fluid Thin Noodles, Cooked And Drained
  • 1/4 cup Soy Sauce
  • 2 Tablespoons Sugar
  • 4 cloves Garlic, Minced
  • 2 Tablespoons Rice Vinegar
  • 3 Tablespoons Pure Sesame Oil
  • 1/2 teaspoon Hot Chili Oil
  • 4 Tablespoons Canola Oil
  • 4 whole Green Onions, Sliced Thin

Preparation Instructions

Whisk all ingredients (except noodles and green onions) together in a bowl. Taste and adjust ingredients as needed.
Pour sauce over warm noodles and toss to coat.
Sprinkle with green onions and toss.
Serve in a bowl with chopsticks.

It is unlove that makes people unwell, and it is love alone that can make them well again. It is clear to me that those who helped me the most were not the eldest of them, the holiest, or the best schooled in counseling; it was those who loved me the most. They enabled me to believe in myself, to rejoice in my own being and gifts, to accept the mystery of my life.

It’s That Time of Year Again

Where I see one of the movies nominated for Best Picture at the Oscars and then act outrageously indignant when it doesn’t win because it was obviously the best of the bunch.

I’m pretty excited.

Well, Color Me Surprised

Apparently there’s some big four-CD-compilation-Bob Dylan tribute-Amnesty International celebration album due out tomorrow? You can listen to a bunch of the songs or purchase the album here.

One of the Dylan covers is sung by Miley Cyrus, and I was straight up shocked to find that not only did it NOT make me want to punch Miley Cyrus in the face, I actually really liked it. I mean, I think a more skilled singer would do an even better job, but Cyrus sounds pretty good and the song suits her well. It just goes to show you how much you can achieve with truly fantastic source material. I know Dylan’s voice isn’t everyone’s cup of tea, but good heavens can that fella write a song.

This is the perfect day for snuggling on the couch and watching movies and wrapping yourself in a blanket, while you drink tea and make absolutely no effort or give any thought at all to leaving the house. It is chilly and rainy. Unfortunately, I’m not curled up on the couch, but I am so busy with clients today that I don’t have much time to even consider making my way outdoors. The house is warm and softly lit and I feel wonderfully cozy.

Speaking of My Little Sister

The Christmas gifts she made for me and Dan arrived in the mail yesterday. To aid me in my desire to cook and bake more often, and to help Dan be the ultimate grill master this summer, she gave us some awesome handmade aprons!

I’m so impressed by my sister’s many talents (and only a little jealous). She paints, she draws, she sews, she kicks ass.

Seriously, how cute is my new apron?! I love the little bow.

I can’t wait to get cooking!

The past couple of weeks have been really busy, business-wise. It’s been pretty awesome actually, but has left me feeling a little drained. I’ve been spending most of my free time reading and drinking tea, which is basically the best way to spend your free time don’t you think?

But how can I ignore this short, but sweet message from my sister. I’ve got lots of posts planned/in the works and, Liz, I promise to get back to blogging more regularly. Love you too!

Today is one of those days

where the cat has decided to test my resolve to not commit catacide (it should be a word). I think I have said “Maggs” in a drawn out, disapproving voice more times than I have said any other word in 2012 so far.
