Made these the other day and they were absolutely delicious. They’re so good, even the cat wants a piece!
I had some pumpkin in the freezer that had been sitting there since last year, so instead of buying canned pumpkin, I just thawed the sliced pumpkin, puréed it and used that instead. So if I used soggy, year-old pumpkin and these muffins still tasted amazing, just imagine how good they’ll be if you use fresh ingredients. They were so easy to make and have been perfect for breakfast and snacks so far this week.
